First day of Fall

            Fall is my favorite season in North Carolina. It’s the season where the leaves are changing and falling and the weather cools down. There is nothing I love more than visiting pumpkin patches, drinking apple cider, and wrapping myself in a warm blanket to keep cozy during the season change. We asked our residents what they love the most about fall on our Instagram and the list was long, but here are a few of your favorites.

  • Chai lattes
  • Warming up with soup
  • Having movie marathons with friends
  • Haunted trails
  • Corn mazes
  • Sweater weather
  • Stepping on crunchy leaves
  • Football seasons

Although this autumn may look different than past seasons, there are so many ways that we can celebrate it safely from the comfort of our own homes. North Carolina State kicked off their football season with a win against Wake Forest last Saturday and with cable included in your rent here at VC, you can watch all the football you want! Also, try the recipe below to make homemade apple cider to make your movie nights and roommate bonding nights just a little bit more cozy!

What you’ll need:

  • 10 large apples
  • 1 orange, halved
  • 4 cinnamon sticks
  • 1 tsp cloves
  • 1 tsp whole allspice
  • 1 whole nutmeg
  • ½ cup packed brown sugar

Directions:

  1. In a large stockpot over medium heat, add apples, oranges, spices, and brown sugar. Cover with water by at least 2”. Bring to a boil, then reduce heat and simmer, covered, 2 hours.
  2. Remove orange halves, then use a potato masher or wooden spoon to mash apples. Return to a simmer and let simmer uncovered for 1 hour more.
  3. Strain through a fine mesh strainer, pressing on solids with a wooden spoon to squeeze all juices out. Discard solids.
  4. Serve apple cider warm.
